Basil, Egg and Sausage Breakfast Casserole
Most mornings, a bowl of cereal or oatmeal can do, but some days your family will want something heartier. This quick and filling casserole will please everyone. The following recipe is for two people, but you can easily double or even triple it if necessary.
Ingredients:
- 1 cup diced potatoes
- 2 sausage links
- 4 eggs
- ½ diced onion
- 1 bunch basil
- Salt, pepper, paprika, and garlic powder
Note – you can top your creation with tomatoes if you like.
Preparation:
In an oven-ready dish, place the potatoes, sausage, and half of the spices. Bake at 350 degrees for ten minutes.
Next, mix in the eggs and top with the rest of the spices. Bake for ten more minutes or until the eggs are the consistency you prefer.
Remove from the oven and garnish with basil and cilantro.
Instant Pot Pork Tenderloin
No need to visit an expensive restaurant or settle for sandwiches every night. When you want a delicious, affordable meal with no fuss, try Instant Pot Pork Tenderloin.
Ingredients:
- Pork tenderloin
- 2 cups vegetable broth
- 1 bag baby carrots
- A dash of salt, pepper, oregano, thyme, onion powder, or another favorite seasoning.
Preparation:
Set your Instant Pot to saute and spray it with non-stick cooking spray. Then brown the tenderloin on all sides.
Change the Instant Pot setting to meat/stew and set a 30 minute cook time. Put the metal rack in the IP’s bottom and then place the tenderloin on that rack.
Pour the vegetable stock into the pot and sprinkle the tenderloin with the spices.
Add carrots.
Put the lid on the IP and set to “seal.” In thirty minutes, you’ll have a delicious dinner and very little clean-up.
